Skillet Egg Roll In A Bowl

This recipe is perfect for prepping a healthy, delicious yet low-carb lunches for the week!

Plus, it gives you all the deliciousness of an egg roll without the guilt!

Ingredients

1lb lean ground turkey, pork or beef

3 cloves garlic, minced

1 Tbsp freshly grated ginger

1 Tbsp sesame seed oil

2 Tbsp low sodium soy sauce

1 tsp Chinese Five Spice

1 bag coleslaw mix

1 handful of shredded carrots

1/4 head of red cabbage, sliced (optional)

4 green onions, sliced

1 Tbsp sesame seeds, (optional)

Directions

Preheat skillet to medium heat.

Add oil, garlic, and ginger and saute for just one minute until fragrant.

Add turkey. While breaking apart with a spoon, brown turkey until fully cooked through.

Add soy sauce and Chinese Five Spice. Toss to combine and allow to simmer for a minute

Fold in Cole slaw mix, shredded carrots, and red cabbage. Heat until just wilted and carrots are tender. Turn off heat.

Garnish with green onions and sesame seeds. Serve immediately or portion out for lunches. It may be served with brown rice.
